Base: Buttery Brioche Bun
You should use any bun or bread that is your favorite or that you have on hand.
Patty: 85% lean ground beef
Here you can use almost any meat you can find, such as bison, turkey, or even chicken.
Cold Toppings: Spinach or lettuce
You want to be sure to add a fresh element to the burger, such as greens, avocado, or tomato. This gives the burger a crisp of freshness and brightens the flavors.
Hot Toppings: Caramelized Onions
You will want to add a secondary cook topping to enhance the flavor of the burger and add different flavor profiles within the burger. My favorite hot toppings are over-easy eggs, bacon, and mushrooms.

Let the Patties Rest: After cooking the burger patties, allow them to rest for a few minutes before assembling the burgers. This resting time allows the juices to redistribute throughout the patty, resulting in a juicier and more flavorful burger.
Perfect Temp: Aim for medium when cooking your burger. This will keep it juicy and flavorful.
Toast the Buns: Toasting the hamburger buns adds a delightful crispiness and prevents them from becoming soggy. Lightly toast them on a grill, skillet, or in a toaster before assembling the burgers.

For the hamburger patty:
- 1 lb ground beef 85% lean
- 1 tsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 4 hamburger buns
- 2 slices Gruyère cheese
- 1/4 cup garlic aioli
- Lettuce leaves optional
- Tomato slices optional
- Pickle slices optional
For the caramelized onions
- 1 cup caramelized onions
Instructions

- In a mixing bowl, combine the ground beef, Worcestershire sauce, Dijon mustard, and black pepper. Gently mix the ingredients until well combined, being careful not to overwork the meat. Do not add salt yet.
- Divide the meat mixture into four equal portions. Shape each portion into a patty, ensuring the patties are slightly larger than the size of the hamburger buns since they will shrink during cooking. Sprinkle a generous amount of salt to both sides.
- Preheat a grill or cast iron over medium-high heat. Place the hamburger patties on the grill or cast iron and cook for approximately 4-5 minutes per side for medium doneness. Adjust the cooking time based on your desired level of doneness.
- While the patties are cooking, lightly toast the hamburger buns on the grill or in a toaster until they are golden brown.
- Half through the cooking process, add the cheese and caramelized onions to the top of the patty.
- Once the patties are cooked to your liking and the cheese has melted, remove them from the grill or cast iron and let them rest for a couple of minutes. This allows the juices to redistribute and ensures a juicy burger.
- To assemble the hamburgers, spread a spoonful of the aioli on the bottom half of each bun with lettuce leaves of your choice. Place the cooked patty on top of the greens.
