Ingredients
  

  • 2 tablespoons olive oil
  • 1 lb fresh salmon, skin and bones removed, chopped into large pieces
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tablespoon dijon mustard
  • 1 tablespoon Hot sauce
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tsp lemon zest
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper, freshly ground
  • flour, if needed

Instructions
 

  • On a clean seafood cutting board, chop salmon into large chunks and place into blender.
  • Pulse until the salmon is chopped into tiny chunks. (Do not over-blend, we don't want a paste)
  • In a large bowl, combine the chopped salmon, breadcrumbs, onion, parsley, garlic, egg, Dijon mustard, mayo, hot sauce, lemon juice/zest, sea salt, and black pepper. Mix well until all ingredients are evenly blended.
  • Using your hands, form the mixture into 4-5 patties, each about 3-4 inches in diameter. If the mixture is a bit sticky or wet, dust your hands with a bit of flour to help form the patties,
  • Heat the olive oil in a large non-stick skillet over medium heat. Add the salmon patties and cook for 3-4 minutes on each side, or until they are golden brown and cooked through.
  • Serve the salmon patties with lemon wedges and enjoy!

Notes

Chill the salmon mixture: Chilling the salmon mixture for 10-15 minutes before forming the patties will help them hold together better and prevent them from falling apart during cooking.
Use a non-stick skillet: A non-stick skillet is ideal for cooking salmon patties, as it helps prevent them from sticking to the pan and makes them easier to flip.

Don't overcrowd the pan: When cooking the patties, be sure not to overcrowd the pan. Leave enough space between each patty so that they can cook evenly.
Make them in advance: You can make the salmon patties ahead of time and refrigerate them until ready to cook. This is a great time-saving trick for busy weeknights.
Serve with lemon wedges: Squeezing fresh lemon juice over the salmon patties just before serving adds a bright, citrusy flavor that complements the salmon perfectly.
